Non environmental default values are not honored during Enrollment

    Description

      When we configure an Enrollment Flow we can set a default Enviromental Variable, as well as a default value. Currently, if the env_var is undefined, but we provide a default value we do not make use of the default hardcoded value. Nevertheless we make the field modifiable and let the user choose.
